Pretty-as-a-Picture Pavlovas

The storied Australian dessert named after ballerina Anna Pavlova is having a moment. Perhaps because it’s utterly Instagrammable, Or perhaps because it’s so eminently adaptable, with its crisp meringue shell (gluten-free, to boot) topped with creamy filling and fresh fruit. It can be made in a variety of sizes, feature fruit from any season (or no fruit at all!), be tweaked to be犹太逾越节, and even vegan! Here are a few of our favorite takes.

    Pavlova with Apricots and Almond Praline

    Apricots are more tart than sweet, so they offer a nice contrast to the sugary pavlova and the almond praline. Amaretto’s almond flavor enhances the stone fruit, but brandy is delicious, too. If you don’t have fresh or canned apricots, use 12 oz. (about 2 cups) dried apricots, and increase the water to 1 cup to rehydrate them.
