In a medium saucepan, bring the cream and milk to a simmer over low heat. Add 1/2 tsp. salt, whisk in the flour mixture, and return to a simmer. Cook, whisking continuously, until the mixture begins to thicken, 6 to 9 minutes. Transfer to a blender, and add the five cheeses one at a time, pulsing several times after each addition. Blend on high speed until the mixture is smooth and thick, 1 to 2 minutes. Season to taste with salt and pepper.
