Pork barbecue is a great regional dish of the Carolinas, and like all other great regional dishes, it generates a lot of controversy. What everyone agrees on, though, is that good barbecue takes a long time–time to marinate the pork and time to cook it slowly to a melting tenderness. That’s why barbecue is great for outdoor parties. You’ll have plenty of time to spend with friends and make the fixings, especially if you do some work ahead of time. This menu features slightly updated versions of the classic Southern accompaniments: cole slaw, potato salad, and blueberry cobbler.
