It’s amazing how my understanding of the word “salad” has changed. Growing up, “salad” meant “good for you” and therefore “eat as a last resort.” Of course, those were the days when salad=iceberg lettuce + January tomatoes.

It’s safe to say that any salad recipe that begins: “Heat a large skillet over medium heat and add bacon” is changing the salad equation, at least for me.
