Broiled Mushrooms with Goat Cheese and Thyme

Broiling mushrooms is a quick way to brown them and bring out their deep flavor. Serve with seared steak or roast chicken.

  • 3 Tbs. olive oil
  • 1 lb. mixed mushrooms, trimmed and sliced
  • Kosher salt
  • 1 4-oz. log of goat cheese, cut into 6 to 8 slices
  • 2 tsp. chopped fresh thyme
  • Freshly ground black pepper

Preparation

  • Position a rack 6 to 8 inches from the broiler element and heat the broiler. Heat 2 Tbs. of the oil in a 12-inch oven-safe skillet over medium heat. Add the mushrooms, and cook, stirring only occasionally, until beginning to brown, 12 to 15 minutes.
  • Season with 1/4 tsp. salt, and remove from the heat. Arrange the goat cheese on top of the mushrooms and sprinkle with the thyme and some pepper. Drizzle with the remaining 1 Tbs. olive oil. Broil until the cheese just starts to brown, 7 to 9 minutes.
