Creamy Lemon Parfait

Yield:Yields 4 parfaits.

You can make variations of this parfait with crushed cookies or slices of pound cake. You can also use the lemon cream, with or without the fruit, as a topping for pound cake or angel food cake.

  • 6 oz. cream cheese, softened
  • 3/4 cup confectioners’ sugar, sifted
  • Pinch table salt
  • 1 cup heavy cream, chilled
  • 1-1/2 Tbs. fresh lemon juice
  • 1 tsp. finely grated lemon zest
  • 1 Tbs. finely chopped fresh mint (optional); plus 4 sprigs for garnish
  • 4 cups fresh berries (I use a mix of raspberries, strawberries, and blueberries), rinsed and drained well

Preparation

  • 将软化的奶油奶酪,糖果sugar, and salt in a medium bowl. Using a hand-held electric mixer, beat on low speed until the cream cheese is smooth and the sugar is incorporated. Add the heavy cream and beat on low speed until the mixture is smooth, stopping to scrape down the sides of the bowl as needed. Increase the speed to medium high and beat until the cream is billowy and holds medium-firm peaks, 30 to 60 seconds. Add the lemon juice and zest and the chopped mint, if using. Stir briefly to blend.
  • Line up four parfait glasses or stemmed wineglasses. Beginning and ending with the berries, evenly layer all the berries and all but about 2/3 cup of the cream into the glasses. Top with a dollop of the remaining cream and garnish with a mint sprig. The parfaits can be made an hour or two ahead of serving.

    This was very good. I used a homemade cranberry sauce which worked well.I also used plain strawberries which I will macerate next time.Very simple and easy delicious recipe for parfaits

    This was great. I just did it for a lunchtime barbecue, two families including three kids. I made the cream and put it in the refrigerator, and when we were ready, I set out the ingredients for everyone to build their own: an assortment of berries, the cream, and cubes of pound cake. It was a huge success: the kids loved choosing which berries to use, and the sophisticated flavour of the cream mixture impressed the adults. Definitely flagging this one.
