What is it?

Mâche is a tiny, dark green salad green that has a distinctly sweet, nutty flavor. Though this tender, buttery lettuce has been cultivated in France since the 17th century, it’s really only beginning to gain popularity in the U.S.

Don’t have it?

You can substitute another tender, buttery lettuce like Boston or Bibb lettuce.

How to choose:

Like all lettuces, mâche should be brightly colored and fresh looking, with no bruised, slimey, or blackening leaves.

How to prep:

Mâche’s unique flavor and delicate texture shine most in simple preparations. All it needs is a light toss with good quality oil and vinegar and it’s perfect.

How to store:

This delicate green does not keep for very long, so use it within a few days of purchasing. To maximize freshness, wash and dry mâche thoroughly before storing it in airtight plastic bags in the refrigerator.
