Maple-Rosemary Salmon Skewers

  • 1/3 cup pure maple syrup
  • 1/4 cup grainy Dijon mustard
  • 1 Tbs. chopped fresh rosemary
  • 1 Tbs. fresh lemon juice
  • 2 tsp. soy sauce
  • 1-1/2 lb. skinless salmon fillet, pin bones removed, cut crosswise into strips
  • Oil for the grill

Preparation

  • Prepare a medium-high (400 to 475°F) charcoal or gas grill fire.
  • In a small bowl, whisk the syrup, mustard, rosemary, lemon juice, and soy sauce. Set aside half of the sauce. Thread the salmon onto 10- to 12-inch metal skewers and brush the remaining sauce on the salmon. Set aside for 5 minutes.
  • Oil the grill grate and grill the salmon, flipping once, until just cooked through, 4 to 8 minutes, depending on the thickness of the salmon. Drizzle with the sauce and serve.

Serve withStir-Fried Snap Peas with Red Pepper.

    My favorite, go-to salmon recipe. It's the perfect balance of flavors and the perfect backdrop for the rosemary. It never fails to get devoured.

    It's a nice recipe if you like the strong flavor imparted by rosemary. As I've grown older I've learn to like it in small quantities. In this recipe I appreciate the attempt to add a twist to the tried and true sweet/salty flavors normally found in traditional salmon marinades which is why I tried it. Unfortunately I found the rosemary to feature a bit more prominently than I would prefer. I used fresh rosemary as the recipe called for though I would have preferred about 1/2 of the recipe volume. Moreover, there wasn't enough flavor from the other ingredients to better disguise the syrup. My 7 year old immediately called out the flavor at first bite.
