What is it?

Though we know their distinctive aroma from soap and shampoos, lavender flowers (and sometimes even their bitter greens) are an elegant asset to both sweet and savory cooking.

Lavender’s small purple blossoms are a key ingredient in the French herb blendherbes de Provence, and their perfumey, floral flavor is lovely in cookies, cakes, and candies as well as paired with savory foods like pork, lamb, olives, goat cheese, and rosemary. Lavender flowers are also often added to teas, used to infuse oils, or candied and used as decoration for cakes.
