Giardiniera Relish

Giardiniera is an Italian-style mixed pickle that typically contains pearl onions, cauliflower, hot peppers, cucumbers, carrots, and celery. You can find it in glass jars in the supermarket.

  • 2 cups drained Italian giardiniera pickle
  • 1/2 cup coarsely chopped pimento-stuffed green olives
  • 1/4 cup extra-virgin olive oil
  • 3 Tbs. chopped fresh flat-leaf parsley
  • Freshly ground black pepper

Preparation

  • Stem and seed any whole peppers from the giardiniera and then coarsely chop all the giardiniera. Put the chopped vegetables in a medium bowl and add the olives, olive oil, parsley, and 1/4 teaspoon black pepper. Mix well.

The relish can be refrigerated, covered, for up to five days

    I thought this recipe would tell you how to prepare a home made version from scratch. Instead, all it does is make 2 additions to the jar stuff. And most of the jar products already have olives in them!
